春道堂
こんにちは、中村です。今日は昼間っからちょっと語ろうかと。
私はこの春道堂を開くときに、自分がお客だったら行きたい店にしよう、厨房が狭くてもきちんとしたお料理をご提供しようと心に決め、真剣に調理に向き合って今日まで営業を続けてきました。
しかし元スナックの物件を改装した店内のせいか、開店してからしばらくは主に年配の男性の方にスナックのママとして扱われ、カウンター越しに絡まれることが多々ありました。どんなにまじめに料理に取り組んでいてもお客さまに伝わらないのは、私の貫録不足のせいだろうかと悩みました。
今になって気付いたのですが、おそらくは料理人として生きることに腹をくくりきれていなかった私の中途半端な態度が、お客様の誤解を生んでしまっていたのでしょうね。スナックみたいな店の、酒が並んだカウンターの中で、シャツにエプロン掛けで働いていたら、本気で料理に取り組んでいると思ってもらえなくてもしかたがないです。
今までの自分の甘さを悔い改め、休業明けからコックコートを着て働いておりますが、これが非常にしっくりきて、毎日営業開始前に私服から着替えるたびに気持ちが引き締まります。
この店でもっと良い料理を作りたい。食べた後も記憶に残る魅力的な料理を作れる人間になりたい。料理の魅力でたくさんのお客さんに来ていただけるようになりたい。強くそう思います。
小さな店で、私一人で凝ったお料理をご提供するには、やはりコースでの予約をお願いするしかありません。コースならご予約日程に合わせて日持ちのしない食材も仕入れられますし、手間のかかるお料理も仕込んでおくことができますし、季節や食材に合わせた新作にも挑戦できます。
より良いお料理をご提供するためにこれからはよりコースに力を注ぎます！ 冬場に大好評だった百合コースに変わる新コースも現在考案中です。現在試行錯誤しながらメニューの精査中です。近日中に発表できると思います。
単品メニューを今以上に充実させることは難しいのですが、コース用の料理を余分に仕込んだときなどに限定品として黒板に載ることもあるかもしれません。お楽しみに！ 実はレギュラーメニューにもおいしいものがありますしね。
新しくなった選べるお通しもご好評いただいておりますし、コース以外でご来店のお客様にも少しでも楽しんでいただけるよう、これからも工夫し続けたいと思っております。どうかよろしくお願いいたします。

I know this if off topic but I'm looking into starting my own weblog and was wondering what all is required to get setup? I'm assuming having a blog like yours would cost a pretty penny?
